Good For You and Tasty Chicken Thigh Dishes For The Slow Cooker
Have you cooked with chicken thighs lately They are inexpensive, very tasty and quite healthy. Just about the best way to cook them is in the slowcooker. Just about any recipe that calls for chicken breast can also be made with thighs and on top of that, you'll find all kinds of yummy slowcooker chicken thigh recipes. The meat is just as good for you and much more economical.
Here are some healthy slowcooker recipes from my collection that use chicken thigh meat.
Dinner Option 1 - Crockpot Chicken Stroganoff
8 boneless, skinless chicken thighs
One container (16 oz) of fat free sourcream
1 envelop of onion soup mix
1 can cream of broccoli soup
Start by combining the can of soup, the soup mix and the sour cream in a small bowl. Add the thighs to the crockpot, then cover them with the soup mix. Cook on low for about 6 hours or until the chicken starts to fall apart. Serve the chicken of cooked white rice or noodles.
Dish #2 – Cola Chicken For The Slow CookerCrockpot
6 to 8 chicken thighs
1 cup ketchup
1 cup cola
1 onion (sliced)
A little pepper and salt
Start by seasoning your chicken with salt and pepper. Transfer the chicken to the crockpot. Top with the sliced onion. Mix the ketchup and cola together and pour it over the chicken. Cook on low for about 7 hours. Take out any bones and shred the chicken before pouring it over white rice.
For a lower calorie dish use low-carb catsup and diet coke.
Recipe 3 – Thai-Flavored Slowcooker Chicken
6 chicken thighs
1 large can diced tomatoes (32 oz)
1/3 cup of peanut butter (all natural if possible)
1 bell pepper (sliced)
1 onion (sliced)
1/2 tsp red pepper flakes
Salt and pepper to taste
Put your vegetables in the slowcooker, then season the meat with pepper and salt and add it on top of the veggies. Mix the tomatoes, peanut butter and red pepper flakes and pour everything on top of the meat and vegetables. Cook on low for 8 to 9 hours.
We like this best over steamed rice.
To make a complete meal out of any of the recipes above add a side salad or some steamed veggies. We especially like asparagus with these.
